An unexpected cookoff



Today I had planned on crafting.

Yesterday, I spent the afternoon in the kitchen making lasagne and a casserole so I wouldn't have to cook for a few days. However.... our stand alone freezer in the garage had other ideas for me.

The freezer had a meltdown - literally. The thermostat went and the freezer started to defrost. A call to my local repair man and the situation was under control, but not without casualties. Some of the meat had started to defrost and needed to be cooked.

I could have invited the entire neighbourhood for a barbecue, but instead, I decided to get creative. With no time to waste, this is what I cooked:

A chicken sausage casserole - chicken sausages cooked with bacon, mushrooms, garlic, freshly diced tomatoes, cream and white wine.

A pork sausage casserole - pork sausages cooked with garlic, red onions, red peppers, okra from the garden, mushrooms and chickpeas.

An Italian sausage casserole - Italian sausages cooked with garlic, red peppers, bacon, tinned tomatoes, red wine, dried oregano with parsley and basil from the garden.

A lamb soup - made with lamb bones, 2 chicken wings, onions, carrot, celery, mushrooms, barley, cooked roast lamb and parsley from the garden.

I'm glad I had a well stocked fridge and pantry and I am happy to now have a freezer full of ready meals. I have frozen my lasagne too, because there is a chicken and 8 small fish in the fridge half defrosted and ready to be cooked.

  1. Oh dear, not the freezer!!! YOU must have had a MELTDOWN!!! I could do with some of those frozen meals here in my fridge about now! Enjoy :)

  2. Yes... you're right, I did have a bit of a meltdown myself. I was glad the repairman could come out within the hour and that the day ended well. I wish I was close enough to drop in a sausage stew for you:)
